A Berry Peachy Summer

First day of summer is quickly approaching! For me June is one of the most enjoyable months, marked by the commencement of lazy afternoons basking in the sun and the time of year when all of my favorite fruits are at their most enjoyable state. Watermelon, mangoes, blueberries, apricots, plums and peaches, oh my! Since I was a little girl there has been nothing more I enjoy than a bowl of my favorite fruit to snack on a hot summer day. Which brings me to share with you my favorite summer breakfast. It’s super simple, light and absolutely delicious. Aside from my love of fruit I also love Greek yogurt and granola. I’m always trying all different varieties of granola because, it’s hard to find one that has the perfect balance of sweet, crunchy and nutty. This simple recipe gives me all the energy to get me through the morning with each spoonful bursting with the raw sweetness of summer’s best flavors.
Summer Berry Peach Parfait serves 2-4
1 half pint blueberries
1 c slivered almonds
3 tsp agave nectar (or honey)
1 ½ c of Chobani 0% Greek Yogurt (Yay coupons! http://chobani.com/coupons/)
¾ c of your favorite granola (I recently fell in love with KIND Healthy Grains granola in Oats & Honey Clusters with Toasted Coconut…yuuuum)
Juice of half a lemon
Start by rinsing the blueberries and peaches TIP: rinse fruit and vegetables with 1tsp of apple cider vinegar or salt to get rid of all the nasty-icky pesticides. Also, I would stick with buying organic fruits and vegetables. They’re always fresher, sweeter and vibrant in color. Carefully slice the peaches and place them in a medium bowl with the blueberries. Then squeeze the juice of half the lemon all over the fruit. In another bowl first pour in the yogurt, then sprinkle the almonds, fruit and top with the granola. Now for the best part, drizzle the top with the agave nectar and enjoy!
