I.LOVE. AVOCADOS. Fatty, creamy, nutty mounds of absolute yums!! The green goodness just makes everything better whether sandwiched between a warm, crusty whole grain baguette, sliced over my favorite tacos or blended in my favorite green smoothie. Don’t even think about sharing a bowl of guacamole with me…not going to happen. Here are a few of my favorite avocado recipes!
Cucumber Avocado Tea Sandwiches I made these a while back for two kids I used to babysit. Next thing I know their mom is calling me the next day to ask me why their kids were asking for cucumber sandwiches. They’re the perfect little sandwiches that are refreshing and light. Perfect for summer picnics in the park!
Avocado Banana Power Me Up Smoothie I know what you’re thinking. Avocado in my smoothie…uh….no. At first I was hesitant to try it myself but once you hop over to the other side you’ll want to add slivers of avocado into every shake.
Put the following ingredients in a blender and blend away!
½ avocado (I use ¼ avocado and works just fine!)
1 cups fresh kale or spinach
2 leaves of fresh romaine lettuce
1 tbsp fresh lemon juice
½-1 cup water
Fancy Tip: Add 1 packet of Truvia or some agave nectar to sweeten it up!
Avocado Toast Café Gitane is one of my top favorite brunch places in NYC. Nestled away from the touristy part of Soho it’s a cozy cafe that has made the Avocado Toast their signature dish (they also have an Iced Mint Tea that I can drink gallons of). After my first time devouring the dish I literally had dreams about biting into my next one so, I went to the market, bought some whole wheat baguettes, lemons, avocados and VOILA!
